Method
To cook this meal, preheat your oven to 200C (400F), Gas Mark 6. Line a baking tray with a large piece of foil and cook the rice according to the packet instructions.
The expert said: "While that's bubbling away, put the salmon in the centre of the lined tray. Add the tamari, lemon zest and garlic, making sure the salmon is nicely covered. Season well, then close up the foil to form a loose bag around the salmon; make sure the seal is nice and secure as you do not want any steam to escape. Bake for 20 minutes or until it is cooked through. Then set it aside to cool until about room temperature.
"Once the salmon has been baked for 20 minutes, flake it in your fingers and add it into a bowl with kimchi, cucumber, tomatoes, parsley and sprouted grains or seeds, then the rice.
"Mix gently and transfer to plates, perhaps with another pinch of salt, a grind of pepper, a squeeze of lemon and the optional extra virgin olive oil. You may now tuck in!"
